Our Story

COPA has always been a place people come back to. For the warm welcome, the easy conversation and a bar that keeps the night going. None of that changes.

What changes is the kitchen. With Chef Jonathan N. back at COPA in a new role and with a new vision, now leading the kitchen alongside Chef Agatha A., the menu is finding a stronger identity around steak, fire, fresh seafood and Brazilian-inspired dishes. Jonathan cooked in kitchens in Brazil and the United States before returning to COPA, and that experience shows up on the plate. Personal, never themed.

COPA Fire Steak Sips is a Houston steakhouse seen through the eyes of a Brazilian chef. Brazil is part of our story, not a theme. The goal was never to erase what people loved about COPA. It was to build on it.
